Application
Dough Thickening Agent: GDL acts as a protein coagulant for tofu production, yielding pure white, tender tofu without the bitterness associated with brine or gypsum. It causes no protein loss, offers high yield, and is easy to use.
Milk-Based Gelling Agent: Primarily used in yogurt and cheese production.
Quality Improver: In luncheon meat and ground pork canned products, GDL enhances the effect of color developers while also providing emulsifying and preservative functions, thereby improving product quality.
Acidifier: GDL serves as the main acidic component in composite leavening agents, slowly releasing carbon dioxide to create distinctive pastries. It can also be added to vanilla, chocolate, banana, and other sweet fruit juices and jellies.
Other Applications:
Chelating agent: Used in the dairy and beer industries to prevent milkstone and diatom formation.
