Erythritol (systematic IUPAC name: 1,2,3,4-butanetetrol; molecular formula: C4H10O4; MW: 122.12 g/mol) is a white, odorless crystalline powder with a relative sweetness intensity of 0.65 (sucrose = 1.0). Its structural configuration is illustrated in Figure 1.
Physicochemical Properties:
Solubility: Highly water-soluble (37% w/v at 25°C) with low hygroscopicity.
Stability: Exhibits exceptional thermal and acid resistance (stable at pH 2–11), but decomposes in strong oxidizing agents.
Crystallinity: Prone to rapid crystallization due to its low molecular weight and high solution osmotic pressure.
