Multifunctional application of sodium carboxymethyl cellulose in food industry.
CMC has the characteristics of thickening, stability, emulsification, suspension, water retention, toughness enhancement, expansion, preservation, acid resistance and flavor regulation, etc., and is widely used in various food processing:
Dairy products and beverages (yogurt/soy milk/juice) : effectively inhibit milk protein aggregation and precipitation, ensure uniform suspension of components, maintain system stability and extend shelf life;
Frozen food (ice cream) : inhibit ice crystal growth, increase expansion rate, enhance melt resistance and form retention, and optimize taste;
Noodle products (instant noodles/cookies/pancakes) : significantly improve the texture and cooking resistance of noodles, improve the formability of cookies, make the surface smooth and reduce the crushing rate;
Instant paste food (sesame paste/eight treasures porridge) : as a gelling substrate, giving the product a suitable consistency and smooth texture;
